We at Salumificio Peveri make this prestigious, high-quality Salami starting by choosing the most suitable cuts of pork: the cervical muscle band. Pigs as well are strictly selected from the farms of Emilia Romagna and Lombardy.
The meat goes through rigorous processing. First, we season it with spices, herbs, and salt. Then we leave it to rest at low temperatures to allow an effective aromatization process. Finally, we bag it in a natural suet casing. After binding it well with strings, we leave the Coppa to dry for about 15 days and then we age it in our cellars for another 6 months.
With its delicate taste, this salami is perfect on top of a slice of fresh and crunchy bread or to fill a classic Piadina.
