The “Strolghino” Salami:

Short-matured salami, made with fine grinded Culatello meat, the part taken from the bottom end of the pig. It is a young salami, therefore it is soft, with a short seasoning. Strolghino is obtained by trimming lean parts of Culatello, with the addition of a small amount of salt and spice. The quality of the meat, its scent and its sweetness are the characteristics that make Strolghino loved by connoisseurs and specialized gourmets.
