The Salami Piacentino D.O.P.:

Salami Piacentino D.O.P. is the typical salami produced in the province of Piacenza, northern Italy. It is produced using pork meat and fat only, taken from the leg, the shoulder, and the belly. The raw material comes from pigs born and raised in Emilia Romagna and Lombardy, while the processing area includes the entire province of Piacenza, where this product has been present for centuries. The production composed by four phases: 

·         First, the pork meat and fat are chopped using a moderately large grinder, in full respect of the tradition;

·         Follows the kneading process, during which salt, spices, infused garlic and wine are added in carefully dosed quantities;

·         The obtained mixture is then stuffed into a natural pig casing, bound with twine, and stored to dry for about a week;

·         It follows the seasoning period of at least 45 days.

 The finished product has a cylindrical shape, with a weight ranging from 400 grams (0.8 pounds) to 1 kilograms (2.2 pounds), and a compact look. Salame Piacentino must be put in commerce provided with the appropriate D.O.P. mark, guaranteeing the origins and the respect of traditional processing practices. The scent is characterized by a delicate aroma of seasoned meat, accompanied by a slight spice flavour. The taste is soft but distinctive, sweet and savoury at the same time, with a delicate aroma of spices.
