An intense and delicious flavor characterizes this type of salami. The grain looks rather coarse and the eye-catching, white fatty parts contribute to defining a delicious organoleptic quality.
We achieve such quality by carefully processing selected front cuts of pork coming from hogs farmed locally in Emilia-Romagna and Lombardy. We add to the minced meat the right quantity of salt and pepper and, peculiar touch, some nutmeg, garlic paste, and high-quality Gutturnio wine.
The final mixture is then filled into natural casings that have the unique feature of being fat and thick enough to preserve and protect the full-rounded taste. The aging lasts 30 days and is promoted by the effective natural micro-climatic environment of our cellars.
The Casereccio (homemade) salami is the protagonist of your table and the crown jewel of your appetizer plate. It can be enjoyed by slicing it into rather thick slices and putting it on top of any kind of bread, wholemeal, white, cereal.
