The Salame Del Pellegrino (pilgrim’s salami) is sold in sizes weighing about 600 gr. It features an elongated shape and a chromatic balance between the lean and fatty parts, which you get by using a balanced, medium-grained grinding that highlights the taste.
Slices must be oblique, at an angle of 45 degrees. The production strictly follows an ancient recipe that can be traced back to the Chiaravalle area.
After the grinding, the paste is stuffed into natural casings which are then tied by a string. After being branded and date-stamped, the salami is transferred to our cellars, where it is aged for an optimal period of 45 days in an ideal microclimate.
Its organoleptic qualities are unique and they are revealed by a rather delicate and refined flavor. Serve it with your appetizers, or at your Italian dinner party to share such a refined experience. Or simply put it on top of a slice of white or multigrain bread.
