An intense and delicious flavor characterizes this type of salami which presents itself to the eye with its rather coarse grain and in which the white of the fatty parts stands out which contribute to defining a delicious organoleptic quality.
It is obtained from our careful processing of pork that comes exclusively from farms located in Emilia-Romagna and in Lombardy and is obtained only from the front parts of the animal. To the minced meat, in addition to the right quantity of salt and pepper, the delicious peculiarity of nutmeg is also added, the evidence of a squeeze of garlic and all filtered with the high quality of Gutturnio wine.
The final mixture thus obtained passes to be placed inside natural casings which have the peculiarity of being fat and with a thickness such as to be able to better preserve and protect all the taste. Its optimal maturation, which takes place in the environment of our cellars, in which an effective natural microclimate reigns, must last for 30 days.
The “Salame Casereccio” allows you to bring to the table an exquisite goodness that enriches the plate of appetizers. It can be tasted perfectly by cutting it into rather thick slices and goes well with any type of bread, wholemeal, white, with cereals.
