The Sapiente (wise) is the Salami of the past: large in size and extremely tasty. It features a typical elongated shape and we suggest cutting oblique, rather thick slices to fully appreciate its organoleptic traits.
We process it in our shop, beginning from the careful selection of the noblest cuts of heavy pork meat from the Po valley, ground to the right consistency, leaving fatty parts clearly visible. The paste is then stuffed into a local natural casing (larger than usual), and carefully tied with a string.
The aging process, important and very delicate, is carried out exclusively in our cellars, where we can guarantee a suitable natural microclimate, for a period ranging from 90 to 120 days. The final result is of the highest quality.
The Sapiente is a salami that best reveals its tasty delicacy paired with different aged cheeses. Arrange this combination on your platter and enjoy it with a glass of excellent wine.
