The Fonti dei Monaci Goletta (or Guanciale) provides a unique flavor that perfectly balances the organoleptic nuances of the very tasty lean part with the typical sweetness of the fatty part.
This product is processed in our factory according to an artisan technique that preserves and guarantees high quality. It is obtained from cheek and throat cuts of carefully selected pigs.
After being salted, sprinkled with black pepper, and further cured with spices and herbs, it spends an aging period of at least 3 months (it can reach up to 5 months, which is considered optimal) in the natural environment of our cellars.
This Salami features a refined, delicious flavor. It can reach its full potential both as a prestigious appetizer dish and as a simple but tasty snack. You can also slightly brown it with some garlic and put it on top of your bruschetta. Serve it with a glass of excellent wine and it will be dreamy.
