We at Salumificio Peveri guarantee an accurate and expert selection of pork meat and rind which are used to produce this delicacy. In fact, to accomplish an optimal final result, we need quality, certified pigs bred in farms located in Lombardy and Emilia Romagna.
After grinding the meat and seasoning it with a specific blend of spices, the mince is stuffed into a natural casing, tied by hand, and dried for one day. It is then vacuum-packed in order to preserve freshness and taste.
