Seasoned flat Pancetta, pressed between two pieces of wood bound together to keep it more compact and flat. It is traditionally hand-salted with sea salt, and then stored in our cellars. It takes its name from the area of origin, characterized by the presence of natural "fountains". The difference between this product and the Pancetta Piacentina D.O.P. is in the use of lean meat cuts belonging to different breeds of pigs than D.O.P. Piacenza. The flavour is particularly sweet.
