Fiocco, also known as Fiocchetto, is the smallest and most muscular portion of the back of the swine thigh. The processing is the same as that of the Culatello: after trimming the thigh flesh, the meat is given its  characteristic rounded shape. The meat is then dry salted and placed in the bladder of the pig, with a natural string net. Once processed, the product is stored in our cellars for seasoning for a period of 6 months, slightly shorter than that of Culatello. The result is a thin slice, with a velvety and delicate flavour.
