Fiocco di Culatello:

Fiocco di Culatello, also known as Fiocchetto, is the smallest and most muscular portion of the back of the swine thigh. The processing is the same as that of the Culatello: after trimming the thigh flesh, the meat is given its  characteristic rounded shape. The meat is then dry salted and placed in the bladder of the pig, with a natural string net. Once processed, the product is stored in our cellars for seasoning for a period of 6 months, slightly shorter than that of Culatello. The result is a thin slice, with a velvety and delicate flavour.
